So I made these low-carb pancakes today and E loved them. Like ate the whole thing loved them.

This is the time of the year where we start planning trips for the Spring and Summer so we’re back to focusing 100% on building our health and stamina so we can be out on the water, portaging and hiking. Breakfast is my favorite meal of the day, and I especially love Sunday breakfast. It’s more leisurely at this time of the year since we aren’t already on the road or in the water or out and about. 

If you are expecting a low-carb, keto friendly pancake to cook the same as your gluten version – you are in for a surprise. The batter is much wetter and I find the best bet is to cook them in a frying pan that you can add a lid to to help them steam. Pile on some berries or bananas and some maple syrup if you want and these are a great healthy way to start your day.
